Below is a standard timeline for a Canvas course. Some instructors will choose to make adjustments to a course that may remove it from this timeline early, but in general, this information depiction of when a course should normally be open to an instructor and a student. 

Status/Age Of Course When does this happen? Student Access Instructor Access
Course creation by Registration and Records 6-8 Weeks before term starts Visible, no access. Full access to course.
Course Start Date Passes As soon as the start added by the instructor date passes. Visible, no access. Full access to course.
Course is published. Option selected by instructor in settings. All published content Full access to course.
Course End Date Passes Set by instructor, date has passed. View access, unable to make changes unless the instructor check the restrict student after check box View access and course copy access.
Restrict students from viewing course after term date checked in course Settings Manually pressed by instructor None View access and course copy access.
